Event Description

Join Jazz and her mom for a culinary experience dedicated to one of Puebla’s most iconic dishes: Chiles en Nogada.

More than a cooking class with professional chefs, this is an invitation to cook with us using a recipe that has been part of our family for years. Jazz is originally from Puebla and grew up seeing this dish return to the family table every season. Today, she wants to share not “the definitive recipe,” but the recipe her family has prepared, talked about, and enjoyed for generations.

During the experience, we will prepare together the different elements that make this dish so special: we’ll work with poblano chiles, prepare the filling and the walnut sauce, and finally assemble our Chiles en Nogada with pomegranate seeds before sitting down to enjoy them around the table.

This is a fully hands-on and relaxed experience. While we cook, we’ll talk about the ingredients, the season of Chiles en Nogada, and the stories surrounding the dish. And although a little Mexican history will probably come up, don’t expect a lecture about Agustín de Iturbide: we’d rather share the stories we know, the ones we’ve found in our cookbooks, and of course, a little good gossip while we cook.

The idea is for you to take home more than just a recipe: a few hours of cooking the way we would with family during Chiles en Nogada season.

The aprons are ready. 🇲🇽
